Red Cabbage color

Origin  Red cabbage red is extracted and purified from edible vegetable Brassica Oleraea Var(cabbage).
Composition  The pigment mainly consists of mixture of various anthocyanins.
Characteristics  Red Cabbage Color is a purple-red powder, liquid in brown purple color, which easily soluble in water and ethanol solution, not soluble in oil. The color is purple-red and stale when the solution is acidity PH<3. Ph3—6, the color is stable in pink red. Condition PH>6 , the color is blue. Alkalinity condition, the color is green and not stable.
Application   wine, beverage, soaked food, cakes, candy, jam, jelly, etc
Storage  Sealed, avoid light, store in cool and dry place
